Black Bean Sweet Potato Breakfast Bowl

Savory but sweet, black bean sweet potato bowl. This is packed with protein, healthy carbs, healthy fats and veggies.

Servings: 4
Ingredients:
» 1 15oz Can of Black beans
» 2 Medium purple sweet potatoes (or any other kind of sweet potato)
» ½ Medium Zucchini
» ½ Medium Bell pepper any color
» 2 Cup Fresh spinach
» 2 Green onions
» ½ tsp Ground Black pepper
» ½ tsp Garlic powder
» ¼ tsp Himalayan salt
» ½ tsp Cumin powder
» 1 Tbsp Extra virgin olive oil
» 4 tsp Hemp seeds (optional)
» 4 Eggs (optional)
» Salsa to go on top (optional)
Directions:
Open can of beans and rinse till bubbles are gone, set aside. Wash and chop up sweet potatoes into cubes. Heat up medium pan with 1 Tbsp of olive oil on medium heat. Once heated add sweet potatoes and cook for 2 minutes on one side and flip cook for another 2 minutes. While potatoes are cooking chop up veggies. If using eggs get a pan heated and start cooking eggs how you like. I did over easy, where it is not all the way cooked through. Add zucchini, peppers to sweet potatoes cook for 5 minutes till potatoes are mostly done. Add in rinsed black beans, green onions and seasonings, cook for 3 minutes till beans are warm. Mix in spinach, put in bowls and place 1 tsp hemp seed, salsa and egg on top.
Cooking Tips:
To make sure potatoes are done, take a fork and see if it goes into the potato easy. Feel free to add more veggies to the dish.
