Oatmeal Applesauce Cranberry Cookies

Soft cookies, no added sugar; oatmeal applesauce cranberry taste with a hint of cinnamon. These are perfect for that sweet tooth craving.

Ingredients:

Dry ingredients:

» 1 Cup Quick oats (or blend up old fashion oats)

» ½ Cup Old fashion oats

» ¼ Cup Blanched Almond flour

» ¾ tsp baking soda

» 1 tsp Cinnamon

» ½ tsp Himalayan salt

 

Wet Ingredients:

» ¼ cup Monk fruit sugar

» 1 large Egg

» 2 Tbsp Extra virgin olive oil

» 1/3 Cup Apple sauce

» 1 Tbsp Chia seeds

» 1 ½ Tbsp water

 

» 1/3 cup Dried Cranberries with no added sugar (or raisins with no added sugar)

Directions:

Heat oven to 350°F; grease a cookie sheet.

Place the chia seeds and water into a small bowl and let it set till it starts to turn to a gel.

In a large bowl mix quick oat, old fashion oats, almond four, baking soda, salt and cinnamon.

In a medium bowl whisk together egg and monk sugar. Add in olive oil, applesauce and chia seed water mixture and combine.

Combine wet mixture to dry and add in cranberries.

Take spoon full of cookie mixture and place onto cookie sheet and form into a cookie.

Cook for 9 minutes till starts to brown and a tooth pick comes out clean

Cooking Tips:

If you like more crunchy cookies then soft, cook for another 2 minutes or so.
