Peanut Butter Date Protein Balls

Soft gooey peanut butter, date and oat taste with a crunch from the quinoa cripies.

Directions:
To start if the Dates still have pits take the pits out and put 1 cup into a bowl. Pour hot water over dates till covered and let soak for about 4 minutes. While the dates are soaking add the ¾ cup of old fashion oats to a food processor and pulls for a few seconds. Add the Dates, ½ tsp cinnamon, 1 Tbsp chia seeds, 2 Tbsp creamy peanut butter and ½ tsp maca powder and blend. Once blended mix in the ¼ Cup quinoa crispies with a spoon. Take a table spoon and roll into a ball, should make about 16. Store in an air tight container in the fridge.
Cooking Tips:
Instead of using old fashion oats you can use instant oats. Make sure you blend up the dates before adding the oats and rest of ingredients if using instant oats. Feel free to use any nut butter you want it does not have to be peanut butter. If you want a chocolate peanut butter taste add ¼ cup dark chocolate chips to the food processor when blending all ingredients together.
