Strawberry Cinnamon Nutmeg Cake

Yummy strawberry cinnamon nutmeg cake topped with strawberry chia sauce, easy and healthy option when you want something sweet.

Ingredients:

Dry Ingredients:

» 1 ½ Cup Blanched Almond Flour (or Coconut flout)

» 1 Cup Old Fashion Oats Blended (or oat Flour)

» ½ tsp Baking Powder

» ¼ tsp Himalayan Salt

» 1 tsp Cinnamon Powder

» ½ tsp Nutmeg Powder

» 1 Tbsp Chia Seeds

 

Wet Ingredients:

» 2 Medium Eggs

» 1 Cup unsweetened Plant Milk

» ¼ Cup Unsweetened Apple Sauce (optional)

» ¼ Cup 100% Maple Syrup (or Unfiltered Honey)

 

» 7 Chopped Fresh Strawberries

 

Topping:

» 5 Fresh Strawberries

» 1tsp Chia seeds

Directions:

Heat oven to 375°F and grease a 8x6x2 inch glass baking pan.

Blend old fashion oats till fine.

Mix all dry ingredients in a large bowl.

In a small bowl beat eggs and add rest of wet ingredients and combine.

Add wet to dry ingredients and mix together.

Chop up strawberries and add to cake batter and combine.

Pour into baking pan and spread around cook for 30 minute till tooth pick comes out clean and starts to brown.

While cake is cooking, place the 5 strawberries into a blender and blend till smooth consistency and add chia seeds blend till combined and let site.

Once cake is done let cool and pour strawberry chia mixture on top of cake and spread around.

Cooking Tips:

If cake is not all the way done cook for a few more minutes till tooth pick come out clean.

Store in an air tight container in fridge.
